No bake cookies come together in next to no time. With just 6 ingredients you can whip up these peanut butter chocolate pretzel cookies. The outcome will be delicious sweet and salty cookie that the whole family will love.
Since I am a mother of two small kids, me-time is rare.

But I love, love, love to bake, cook, make up recipes, take pics of all the goodness and everything involving food. So what do you do when you have bake cravings and don’t have too much time on your hands: you make something quick and good. These no bake peanut butter chocolate pretzel cookies are one of the easiest cookies I’ve ever made. Because the are no bake you don’t have to add flour or eggs, therefore no oven. By the way, I used these pretzel sticks you find on your average (Dutch) birthday parties. Rather boring snack, if I may say so but they are to die for in combination with chocolate and peanut butter.
The busy mama
Sometimes I have the luxury that both kids take their afternoon nap at the same moment. I made these peanut butter cookies in the afternoon, while Elle (9 months) was sound asleep and Jora (our almost 3 year old toddler) was trying to take a nap. With the emphasis on trying. I love to bake and it had been a while since I baked something (yes, a week is a long time without baking). With some inspiration of my bff pinterest and the ingredients I had in the pantry I made these peanut butter cookies.
But Kina, why oh why should I make these peanut butter chocolate pretzel cookies?
Let me tell you why, maybe I can convince you. I’ll sum it up:
- First of all: staying cool, making these without an oven
- It’s easy as 1,2,3
- You can make it together the little ones, instant fun
- It is secretly very vegan-proof …
- … and also kind of healthy.
- But above all: THEY ARE SO DELICIOUS.
The sweetness of the maple syrup with the salty touch of the pretzels and the peanut butter makes it a delight for your tastebuds.
But, back to the whole making things, while having small children calling for attention. When I just finished the first part of this cookie, setting it aside in the fridge, I heard: ‘MAMAAA, MAAAMAAAA..’. Calmed Jora down, got back in the kitchen, whipped up the peanut butter topping, popped it in the freezer when I heard again:
– ‘MAAMAAAA..’. –
That was all the me-time of the day, but more than enough for this mama to make some tasty cookies. So if I can do it, you can do it! Well, need I say more?

no bake peanut butter chocolate pretzel cookies
For the chocolate cookie
- 30 g coconut oil
- 45 g peanut butter
- 80 g maple syrup
- 25 g g Dutch processed cacao
- 1 tsp vanilla extract
- 50 g pretzel sticks
For the peanut butter topping:
- 10 g coconut oil
- 80 g peanut sutter
- 20 g maple syrup
- 7 pretzel sticks for decorating
Add 9 cupcake liners into tin.
Smash all the pretzel sticks in a clean tea towel until small pieces
Small saucepan melt 30 g coconut oil, 45 g peanut butter, 80 g maple syrup, 25 g cacao and 1 tsp vanilla extract. Whisk together until fully combined. Remove pan from heat and stir in the 50 g pretzel pieces
Divide over the 9 cupcake liners. Set aside in the freezer while making the peanut butter topping.
In a small saucepan combine 80 g peanut butter, 20 g maple syrup and 10 g coconut oil. Whisk until fully combined.
Spoon peanut butter topping over the pretzel cacao mixture. Freeze for about 20 minutes until set. Store refrigerated.
Peanut allergy? Use some other nut butter like almond butter, cashew butter, hazelnut butter
You can try rolled oats instead of pretzels, for an even more healthy cookie. Pretzels give a more crunchy consistency.
The cookies taste best right out of the fridge.
